Pan Sear Scallop:
Ingredients:
Scallop 150 gm
Green peas 50 gm
Mix root vegetables 100 gm
Olive oil 5 ml
Salt & Black pepper to taste
Cream 10 ml
Clarified butter 10ml
Lemon juice 5ml
Butter 20 gm
Method
In a pan add butter ,onion, garlic, sauté well
Add in green peas and cream cook for around 5 more minutes
Now blend and it to make puree,
For Scallops in a pan add oil seared the scallops nicely
Plating, Puree. Scallops and
make a mix root vegetable salad and serve it.
Poached Chicken Breast with Saffron Foam:
Ingredients:
Chicken breast 100gm
Asparagus 40gm
Broccoli 20gm
Onion 20gm
Butter 20 gm
Salt & Black pepper to taste
Olive oil 5 ml
Fresh rose Mary 5gm
Garlic 10 gm
Saffron 2 gm
Method
In a pot put chicken stock bring to boil, add chicken breast, rosemary is good for taste,
Cook it for around 15 minutes until well done
In the pan add butter sauté garlic and sauté asparagus inside as well the broccoli,
Use salt and pepper to give good test
For platting Asparagus first then boiled chicken breast
The Saffron Foam
Use Chicken stock 100ml good taste ( S/P/) add saffron
Let boil 3 minutes now
Mix with cold butter 40 gr and olive oil 20ml until you have a stable foam (yellow colour )

Quinoa Salad:
Ingredients:
Quinoa 20 gm
Tuna 50 gm
Tabasco sauce ½ teaspoon
Sweet ginger 10 gm
Olive oil 5 ml
Salt & Black pepper to taste
Fresh parsley 3 gm
Onion 5 gm
Bell pepper 5 gm
Fried carrot for garnish
Method
Boil the quinoa for 5 minutes, and strain it, make it cold and put in a bowl
Add chopped baby onion, bell pepper and to the quinoa
Mix it with salt pepper,
cut a tuna in small cube and add to bowl , mix
Well now , add salt, pepper sweet ginger as per your taste, serve it.
Garnish Basil flower or fried carrots
Steamed Salmon on Salsa:
Ingredients:
Salmon 80 gm
Avocado 20 gm
Pineapple 20 gm
Onion 5 gm
Tomato 10 gm
Green chilli 5 gm
Coriander 2 gm
Tabasco ½ teaspoon
Sugar 2 gm
Salt & Black pepper to taste
Olive oil 5 ml
Method
Take a bowl, put in diced pineapple, onion, tomato, green chilli and coriander, mix all vegetable, than add tobacco, salt, pepper, olive oil and sugar, mix it well again for salsa
